Hard Vegetables ( Raw Plantain, Elephant Yam, Yellow Cucumber, Carrot, Potato, Drumstick, Chayote Squash), cut into 3 inch long strips (strip the plantain, yam, cucumber, potato) – 2 cups
Garlic – 4-5 pods
Water – Quarter cup, sufficiently only to cook the vegetables.
Turmeric powder – 1/2 tsp
Salt – to taste
Preparation of Paste:
Ground coconut (solidified will do) – 1/2 cup
yogurt – 1/4 cup
Cumin seeds – 1/2 tsp
Curry leaves – 10
Coconut Oil – 2 tsp
Wash the vegetables well by soaking in saltwater or vinegar water for at least 20 minutes, to remove pesticides and other chemicals. Cut the vegetables into lengthwise thin size.
Put all the vegetables, add turmeric powder, red chilli powder, curry leaves, garlic crushed, and very few amounts of water just for name sake, as while the cooking process, the vegetables will start release water. That water is enough for the whole process. So care to be taken not to pour water excess.
In aviyal vegetables should not be overcooked. Avoiding pressure cooker is better.
Cook the vegetables till delicate. Check the drumstick to check whether it is delicate if so all different vegetables ought to be cooked. Drumstick takes the longest to cook.
Add salt to this once the vegetables are cooked.
Pound together the coconut, cumin, green chillies and yogurt to a fine paste.
Add this paste to the cooked vegetables.
Notes: You can use different vegetables like the little eggplant, different squashes or melons, and so forth.
NB: This vegetable dish is a dry dish. (Although as per your wish you can use a pressure cooker to cook well (Especially children who hesitate to eat vegetables, for them you can cook well in the pressure cooker to make a veg mash ) and even you can add more water if you prefer a gravy type.
